BASIL TOMATO & AVOCADO BURRATA SALAD
When I was in Mallorca, one of Spanish’s Balearic island in the Mediterranean, I went to a tapas restaurant called Ombu. Located in the city center of Palma, Ombu has a nice contemporary ambience and it’s a modern take on tapas. There, I tried the Burrata salad which I fell in love with and made my own easy version of it which I make at home.
I make this burrata salad especially when I have guests over for dinner and I serve variety of dishes. It pairs perfectly with fresh bread! For those who aren’t familiar with burratas, it is an Italian cow milk cheese made from mozzarella and cream. The outer shell is solid mozzarella, while the inside contains stracciatella and cream, making it much softer and full of flavour. If you eat it with toasted bread, it’s amazing!

BASIL TOMATO & AVOCADO BURRATA SALAD RECIPE
prep time: 10-15 minutes
portion 3-4 servings (as a side dish)
INGREDIENTS
1 burrata
13-15 cherry tomatoes, halved or diced
15 basil leaves (handful), chopped finely
1 small clove garlic, finely minced
4 sun-dried tomatoes from a jar, chopped finely
1 avocado, diced
1-2 tbsp extra virgin olive oil
2-3 tbsp balsamic vinegar
1 tbsp balsamic creme
1 tbsp honey
salt & pepper
DIRECTIONS
Into a medium sized mixing bowl, combine the cherry tomatoes, basil leaves, garlic, sun-dried tomatoes, avocados, olive oil, and balsamic vinegar together. Add salt and pepper to your taste. Plate this salad mix onto a serving plate and set it aside.
Rinse your burrata under cold running water and tap it dry using a paper towel. Place the burrata gently on top of the tomato salad on the plate.
Drizzle balsamic creme and honey on top and serve immediately.
